New local places to eat and shop open at PDX
2026 is an exciting year in Portland’s independent food and shopping scene. And it just so happens that a lot of those buzzed about openings are at the airport.
When we first unveiled the new terminal back in 2024, we announced that the new spaces would be filled entirely with regional favorites. And the first wave brought brands ranging from Blue Star Donuts to Paper Epiphanies.
As the final construction in the terminal concludes, 21 more beloved regional names join the lineup. This includes new openings from returning favorites such as Powell’s City of Books, which operated a kiosk in PDX for the past two years while the legendary bookseller finished building out its new permanent home in the airport.
Here’s all the pop-ups, beloved brands and convenient grab-and-go spots opening in 2026 at PDX. We recommend arriving hungry, thirsty … and early.

New pop-ups
The celebrated pop-up program creates opportunities for neighborhood favorites to bring their retail experience to the airport for one year. In March, we rotated in two more.
ECOVIBE
Browse candles, jewelry, and gifts curated by a sixth-generation Portland family whose Alberta Arts District shop has featured local makers since 2010.
Mikiko Mochi Donuts
Grab a box of chewy, colorful mochi donuts — gluten-free, dairy-free and nut-free — in rotating flavors like passionfruit curd and horchata pudding that taste anything but restrictive.
New permanent shops and restaurants
A few of these brands first appeared at PDX as kiosks during the initial opening in 2024. Now they’re settled into full-size, permanent spaces with newcomers making their PDX debut.
Powell’s Books
Portland’s legendary independent bookseller has traded in the kiosk for a proper storefront worthy of the City of Books name. Browse the shelves for your next airplane read, grab a gift, and keep your phone in your pocket until you land.
Columbia Sportswear
Portland’s best-known outfitter has kept Oregonians dry and warm since 1938. Now they’re bringing that legacy to PDX.
Portland Gear
Show the world your Portland pride by picking up locally printed T-shirts, caps, and backpacks.
Portland Coffee Roasters
PDX’s homegrown roaster has graduated from its North Hall kiosk to a full-size café, serving up all the essentials you need to make it to your gate: espresso drinks, pastries, and sandwiches.
Steven Smith Teamaker
The late Steven Smith’s namesake tea house now has a permanent tasting room at PDX. Clear your head and settle the senses with a cup, then grab gifts for the tea lovers at your destination.
Freeland Spirits
Sip on farm-to-still gins, whiskies, and cocktails made by Portland’s women-owned, women-run distillery. Taste a flight or buy a bottle to go.
Lola’s Cafe
Search out breakfast and nutritionist-approved (literally) deli meals at this branch of Lake Oswego’s beloved cafe.
Kure Superfoods
Fill your tank with premium fuel in the form of cold-pressed juices, smoothies, and grain bowls.
Straightaway Cocktails
Oregon’s craft cocktail movement, squeezed into every can — and now poured in a full tasting room and retail shop.
Even the grab-and-go is local
At PDX, even the quick-stop spots are the product of partnerships with beloved local brands. Grab fresh falafel and Mediterranean favorites made by the team behind Barbur Foods, the family-owned Southwest Portland market that’s been a neighborhood institution for more than 20 years. Browse a curated selection from local makers and crafters at Eastbank Market featuring products from My People’s Market. Throughout the terminal, nine new grab-and-go locations are opening in 2026, each one carrying the name and spirit of an Oregon favorite.
